𝘐𝘯𝘨𝘳𝘦𝘥𝘪𝘦𝘯𝘵𝘴:
For the Shells:
• 1 cup all-purpose flour
• 1 tablespoon sugar
• 1 tablespoon unsalted butter, softened
• 1 egg yolk
• 2 tablespoons water
For the Filling:
• 1 cup ricotta cheese (well-drained)
• ½ cup mascarpone cheese
• ½ cup powdered sugar
• ½ teaspoon vanilla extract
• ⅓ cup finely chopped pistachios
For Garnish:
• ¼ cup chopped pistachios
• Powdered sugar for dusting
𝘗𝘳𝘰𝘤𝘦𝘥𝘶𝘳𝘦:
1. In a bowl, combine the flour, sugar, and butter. Mix until crumbly. Add the egg yolk and water, and mix until a dough forms. Knead the dough on a floured surface until smooth, wrap it in plastic, and refrigerate for 30 minutes.
2. Roll out the dough into a thin sheet (about ⅛ inch).
Cut circles (about 4 inches in diameter) using a cookie cutter.
Wrap each circle around a cannoli tube mold, sealing the edge with a bit of water.
3. Preheat your air fryer to 375°F (190°C).
Spray the cannoli molds with nonstick spray and place them in the air fryer basket. Air fry for 6-8 minutes, or until golden and crisp. Remove and cool before sliding the shells off the molds.
4. Mix the ricotta, mascarpone, powdered sugar, vanilla extract, and chopped pistachios in a bowl until smooth.
Transfer the mixture to a piping bag and refrigerate for at least 15 minutes to firm up.
5. Pipe the pistachio filling into the cooled cannoli shells from both ends until full. Dip the ends of the cannoli into chopped pistachios for garnish.
6. Dust the cannoli with powdered sugar, if desired. Serve immediately & Enjoy!
