## 1. The "Maximum Flavor" Stuffed Chicken
* **2 large Chicken Breasts**
* **The Filling:**
* **2 strips Smoked Bacon,** cooked and crumbled

* **1/4 cup Pistachios,** crushed
* **1/4 cup Sweet Red Pepper,** finely diced
* **1/2 cup Cheddar Cheese,** shredded
* **The Seasoning:** A mix of salt, pepper, garlic powder, and dried "vegetable bouillon" or "vegetal" seasoning for that deep umami kick.
**Instructions:**
1. **SautΓ©:** Quickly fry the mushrooms and red peppers in the bacon fat until soft. Let them cool slightly, then mix with the bacon, pistachios, and cheddar.
2. **Pocket:** Cut a deep pocket into the thickest part of the chicken breast.
3. **Stuff & Seal:** Stuff the mixture inside. Use toothpicks to "stitch" the opening shut so the cheese doesn't escape.
4. **Season:** Rub the outside with oil and your vegetable/chicken seasoning mix.
5. **Cook:** Sear in a pan for 3 minutes per side, then transfer to the oven at **200°C** for 15–18 minutes.

## 2. The Potato "Baked with Love"

* **1 large Russet or King Edward Potato**
* **Olive oil & Flaky Sea Salt**
* **1 tbsp Butter**
* **Fresh Chives**
**Instructions:**
1. **The Prep:** Scrub the potato and prick it with a fork. Rub the skin generously with olive oil and a lot of sea salt.
2. **The Bake:** Place directly on the oven rack at **200°C** for about 60 minutes. The salt draws out moisture, making the skin incredibly crispy while the inside stays fluffy.
3. **The Love:** Once soft, slice it open, fluff the "meat" of the potato with a fork, and melt in a big knob of butter and fresh chives.

* Slice the chicken on a slight bias (diagonal) to show off that colorful, textured cross-section of pink bacon, green pistachios, and melted gold cheese.

### A Little Twist
