This bold, cozy soup brings together tender potatoes, smoky Cajun seasoning, and a rich, creamy broth — all made easy in the slow cooker. It’s hearty enough for dinner and perfect with crusty bread or cornbread on the side.
π ingredients:
• 2 1/2 lbs russet potatoes, peeled and diced
• 1 small onion, diced
• 3 cloves garlic, minced
• 1/2 lb smoked sausage, sliced
• 4 cups chicken broth
• 1 1/2 cups heavy cream (or half-and-half)
• 2 tbsp butter
• 1 1/2 tbsp Cajun seasoning (adjust to taste)
• 1/2 tsp smoked paprika
• Salt & black pepper, to taste

• 4 oz cream cheese, cubed

load the slow cooker
Add potatoes, onion, garlic, sausage, chicken broth, Cajun seasoning, paprika, salt, and pepper to the slow cooker. Stir to combine.

Cover and cook on low for 6–7 hours or high for 3–4 hours, until potatoes are very tender.
make it creamy
Stir in butter, heavy cream, and any optional cheeses or cream cheese.
Use a potato masher or immersion blender to partially blend for a thicker soup.

Cook an additional 15–20 minutes until everything is melted and creamy. Adjust seasoning if needed.
serve
Ladle into bowls and top with bacon, green onions, and extra cheese.
