• 1 lamb shoulder (3–4 lbs), bone-in

• 8–10 garlic cloves, smashed

• 1/4 cup honey

• 3 tbsp Dijon mustard

• 1 tbsp whole-grain mustard

• 1/2 cup olive oil

• 1 tbsp fresh thyme (or 1 tsp dried)

• 1 tbsp fresh rosemary, chopped

• 1 tsp paprika

• 1 tsp black pepper

• 1 1/2 tsp salt

• Juice of 1 lemon

make the confit marinade

Mix olive oil, honey, Dijon, whole-grain mustard, smashed garlic, thyme, rosemary, paprika, pepper, salt, and lemon juice until it becomes a silky, fragrant paste.

prep the lamb

Pat the lamb dry and place it in a baking dish. Rub the marinade all over, making sure it gets into every crease. Add extra garlic around the meat for deeper flavor.
