Ingredients:
Orange Cake Layers (Three 8-inch layers)
• 3 cups (375g) all-purpose flour
• 2 cups (400g) sugar
• 1 tbsp baking powder
• ½ tsp baking soda
• 1 tsp salt
• 1 cup (226g) unsalted butter, softened
• 4 large eggs, room temp
• 1 cup (240ml) milk
• ½ cup (120ml) fresh orange juice
• ¼ cup (60ml) vegetable oil
• 2 tbsp orange zest
• 2 tsp vanilla extract
• Optional: ½–1 tsp orange extract for stronger flavor
• Optional: a few drops of orange food color for the creamsicle look
Orange Creamsicle Frosting:
• 1½ cups (340g) unsalted butter, softened
• 5 cups (600g) powdered sugar
• ⅓ cup (80ml) heavy cream or milk
• 3 tbsp orange juice
• 1 tbsp orange zest
• 2 tsp vanilla extract
• Optional: a drop of orange food color
Instructions :
Make the Cake Layers
Preheat your oven to 170°C (340°F). Grease and line three 8-inch pans with parchment circles.
Whisk flour, sugar, baking powder, baking soda, and salt in a large bowl.
Add the softened butter and mix until the mixture becomes fine crumbs.
In another bowl, whisk eggs, milk, orange juice, oil, orange zest, vanilla, and optional orange extract.
Pour the wet mixture into the dry ingredients and mix until the batter is smooth and creamy.
Add a drop of orange food color if you want a creamsicle shade.
Divide the batter evenly into the three prepared pans.
Bake for 22–28 minutes or until the cakes spring back when touched.
Let the layers cool completely before frosting.
Make the Orange Creamsicle Frosting
Beat the softened butter until pale and fluffy.
Add powdered sugar gradually, beating until smooth.
Pour in the cream, orange juice, vanilla, and orange zest.
Beat until light, creamy, and silky.
Adjust thickness with extra sugar or cream if needed.
Add a drop of orange food color for a soft creamsicle tint.
Place the first cake layer on a board and spread an even layer of creamsicle frosting.
Add the second layer and repeat.
Place the final layer and apply a thin crumb coat. Chill for 20 minutes.
Frost the entire cake with a smooth final layer of creamsicle frosting.
Decorate with orange zest, swirls of frosting, or candied orange slices.
