Ingredients
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 packet taco seasoning
1 can (14.5 oz) diced tomatoes (undrained)
1 cup beef broth
1 package (18–20 oz) refrigerated cheese tortellini
1½ cups shredded cheddar or Mexican-blend cheese
Salt & black pepper, to taste
Green onions (for topping)
Sour cream (for serving)
Instructions
Brown ground beef in a large skillet over medium heat with onion; drain excess grease.
Stir in garlic and cook 30 seconds until fragrant.
Add taco seasoning, diced tomatoes, and beef broth; stir well.
Bring to a gentle simmer, then add tortellini.
Cover and cook 6–8 minutes, stirring once, until tortellini are tender.
Sprinkle cheese over the top, cover, and cook 2–3 minutes until melted.
Top with green onions and a dollop of sour cream. Serve hot.
