1 cup (227g) Unsalted butter, softened

2/3 cup (135g) Granulated white sugar

1 large Egg

1 tsp Vanilla extract

2 ½ cups (310g) All-purpose flour

½ tsp Salt

1 cup (245g) Pumpkin puree (pure pumpkin, not pie filling)

1/3 cup (65g) Granulated sugar

1 large Egg (whisked)

1 tsp Pumpkin pie spice (or mix cinnamon, ginger, cloves)

½ tsp Vanilla extract

Topping: Whipped cream or buttercream for the dollop

Cream the Base: In a large bowl, beat the softened butter and sugar until light and fluffy (about 3 minutes). Add the egg and vanilla; beat until combined.

Add Dry Ingredients: Gradually add the flour and salt. Mix on low speed just until a soft dough forms.

Chill: Wrap the dough in plastic and refrigerate for 1 hour. This prevents the cookies from spreading flat.

Shape the Crust: Preheat oven to 350°F (175°C). Scoop tablespoon-sized balls of dough. Place 2 inches apart on a baking sheet. Use the back of a measuring spoon (or your thumb) to press a deep, wide well into the center of each ball to create a "pie crust" shape.
