CHICKEN MARINADE
• 1.5 lbs boneless chicken thighs or breasts
• 3 tbsp olive oil
• Juice of 1 lemon
• Zest of 1 lemon
• 4 garlic cloves, minced
• 1 tbsp Greek seasoning (or mix oregano, thyme & paprika)
• 1 tsp cumin
• 1 tsp smoked paprika
• 1/2 tsp black pepper
• 1/2 tsp salt
TZATZIKI WITH FETA
• 1 cup Greek yogurt
• 1/2 cup finely grated cucumber (squeezed dry)
• 1/4 cup crumbled feta
• 1 garlic clove, minced
• 1 tbsp lemon juice
• 1 tbsp olive oil
• 1 tsp dried dill or 1 tbsp fresh
• Salt & pepper to taste
GYRO FIXINGS
• Warm pita or naan
• Sliced tomatoes
• Sliced cucumbers
• Thinly sliced red onion
• Lettuce or mixed greens
• Extra feta (optional)

marinate the chicken
Combine olive oil, lemon juice/zest, garlic, Greek seasoning, cumin, paprika, salt, and pepper.
Add chicken, toss to coat, and let marinate 30 minutes (or up to 4 hours).
cook the chicken
Heat a skillet or grill pan over medium-high.
Cook chicken 5–6 minutes per side (thighs may need a bit longer) until juicy and golden.
Let rest, then slice into strips.
make the tzatziki
Mix yogurt, cucumber, feta, garlic, lemon juice, olive oil, dill, salt, and pepper.
Chill until ready to serve.
assemble the gyros
Warm the pita.
Spread a generous layer of feta-tzatziki.
Add chicken, tomatoes, cucumber, onions, and greens.
Top with extra feta or a squeeze of lemon.
