A cozy, hearty, set-it-and-forget-it meal that warms you from the inside out. Creamy sweet potatoes melt into tender lentils, all slow-cooked in a savory, lightly spiced broth. This stew is budget-friendly, nourishing, and perfect for chilly nights… or anytime you want comfort without the effort.
๐ ingredients:
• 2 medium sweet potatoes, peeled & diced
• 1 cup dry red or brown lentils, rinsed
• 1 medium onion, chopped
• 3–4 garlic cloves, minced
• 2 medium carrots, sliced
• 1 can (14.5 oz) diced tomatoes
• 4 cups vegetable broth (or chicken broth)
• 1 tbsp tomato paste
• 1 tsp smoked paprika
• 1 tsp ground cumin
• 1/2 tsp turmeric (optional)
• 1/2 tsp dried thyme
• Salt & pepper to taste
• 1–2 tbsp olive oil
• Optional add-ins:
– handful of spinach or kale at the end
– a splash of coconut milk for creaminess
– chopped parsley for garnish

load the crockpot
Add sweet potatoes, lentils, onion, garlic, carrots, diced tomatoes, broth, tomato paste, paprika, cumin, turmeric, thyme, salt, and pepper to your slow cooker. Drizzle in olive oil.

Mix everything together, pop the lid on, and cook:
• on low for 6–7 hours
OR
• on high for 3–4 hours
Lentils should be soft, and sweet potatoes tender.

Stir in spinach or kale until wilted. Add a splash of coconut milk if you want a creamier stew.

Ladle into bowls and enjoy as-is, or serve with crusty bread, rice, or couscous.
