All the cozy richness of the classic Marry Me Chicken, but made even easier in the crock pot. The chicken gets fall-apart tender in a dreamy sun-dried tomato cream sauce that tastes like you spent hours in the kitchen…even though your slow cooker did all the work.
π ingredients:
• 2–3 lbs boneless skinless chicken breasts or thighs
• 1 cup heavy cream
• 1 cup chicken broth
• 1/2 cup grated Parmesan
• 1/2 cup sun-dried tomatoes (drained & sliced)
• 4–5 garlic cloves, minced
• 1 tsp Italian seasoning
• 1 tsp paprika
• 1/2 tsp red pepper flakes (optional but recommended)
• 1 tbsp cornstarch (for thickening, optional)
• Salt & pepper to taste
• 2 tbsp butter
• Fresh basil for garnish
• Cooked pasta, rice, or mashed potatoes for serving

prep the chicken
Season chicken with salt, pepper, paprika, and Italian seasoning. Place into the bottom of your crock pot.
make the sauce
In a bowl, whisk together heavy cream, chicken broth, Parmesan, garlic, and red pepper flakes. Stir in the sun-dried tomatoes.
pour & cook
Pour the sauce over the chicken. Add butter on top.
Cook on low 4–5 hours or on high 2.5–3 hours, until chicken is tender.
thicken (optional)
For a thicker sauce: remove 1/4 cup of the hot liquid, whisk it with 1 tbsp cornstarch, then stir back into the crock pot. Let cook 10–15 more minutes.
serve
Shred or slice the chicken, spoon that creamy tomato-Parmesan sauce all over, and serve with pasta, rice, or mashed potatoes. Finish with fresh basil.

• Thighs stay extra juicy in the slow cooker
• Add spinach during the last 10 minutes for color & nutrients
• For extra flavor, add 1 tbsp of the oil from the sun-dried tomato jar
• Leftovers thicken beautifully and make amazing next-day pasta
