This dish brings all the flavors of classic bruschetta—juicy tomatoes, garlic, basil, balsamic—tossed with tender pasta and juicy pan-seared chicken. It’s light, vibrant, and still totally comforting… the perfect weeknight pasta that feels fancy without any fuss!
π ingredients:
• 2 cups cherry tomatoes, halved
• 3 cloves garlic, minced
• 1/4 cup fresh basil, chopped
• 3 tbsp olive oil
• 1–2 tbsp balsamic vinegar
• 1/2 tsp salt
• 1/4 tsp black pepper
• 1/4 tsp red pepper flakes (optional)
Chicken
• 2 chicken breasts, sliced or pounded thin
• 1 tsp Italian seasoning
• 1/2 tsp garlic powder
• Salt & pepper to taste
• 1–2 tbsp olive oil
Pasta
• 10 oz spaghetti, linguine, or penne
• 1/2 cup grated parmesan
• Extra basil & balsamic glaze for finishing
π₯£ directions:
prep the bruschetta
In a bowl, mix tomatoes, garlic, basil, olive oil, balsamic, salt, pepper, and red pepper flakes. Let it sit 10–15 minutes to marinate.
cook the pasta
Boil pasta in salted water until al dente. Reserve 1/2 cup pasta water, then drain.
sear the chicken
Season chicken with Italian seasoning, garlic powder, salt, and pepper.
Heat olive oil in a skillet and cook chicken 3–4 minutes per side until golden and cooked through. Slice or cube it.
bring it all together
Add hot pasta to the skillet with chicken. Pour in the tomato bruschetta mixture (juices and all).
Toss with parmesan and a splash of pasta water until glossy and combined.
serve
Top with more basil, more parmesan, and a drizzle of balsamic glaze.
