For the Chicken:
1 lb (450g) chicken breast or thighs, cubed π
2 tbsp olive oil π«
1 tbsp lemon juice π
1 tsp dried oregano πΏ
1 tsp paprika πΆ️
2 garlic cloves, minced π§

For the Tzatziki:
1 cup Greek yogurt π₯
1/2 cucumber, grated & squeezed π₯
1 garlic clove, minced π§
1 tbsp olive oil π«
1 tbsp lemon juice π
1 tbsp fresh dill πΏ
Salt & pepper
For the Bowl:
2 cups cooked basmati rice π
1/2 cup cherry tomatoes, halved π
1/2 cucumber, sliced π₯
1 avocado, diced π₯
1/2 red onion, pickled or thinly sliced π§
1/2 cup crumbled feta cheese π§
Fresh parsley for garnish πΏ
π¨π³ Instructions:
Marinate chicken with oil, lemon juice, oregano, paprika, garlic, salt, and pepper for at least 15 minutes. Grill or pan-sear until golden and fully cooked. Prepare tzatziki by mixing yogurt, cucumber, garlic, oil, lemon juice, dill, and seasonings. To assemble, place rice in bowls, top with grilled chicken, tomatoes, cucumber, avocado, onion, and feta. Add a generous spoon of tzatziki and garnish with parsley.
π Notes & Variations:
Swap rice with quinoa or couscous.
Add kalamata olives for extra Mediterranean flavor.
Make it spicy with chili flakes or harissa.
