Ingredients:
8 slices sourdough bread (or your favorite sandwich bread)
1 cup ricotta cheese
½ cup shredded mozzarella cheese
½ cup sun-dried tomatoes, chopped (packed in oil, drained)
1 cup fresh spinach leaves
2 tablespoons grated Parmesan cheese
2 tablespoons unsalted butter, softened
Pinch of salt and black pepper
Directions:
1. In a small bowl, mix the ricotta with Parmesan, salt, and black pepper until smooth.
2. Spread a generous layer of the ricotta mixture onto 4 slices of bread.
3. Top each slice with fresh spinach leaves, chopped sun-dried tomatoes, and a sprinkle of mozzarella.
4. Place the remaining slices of bread on top to form sandwiches.
5. Spread butter evenly on the outer sides of each sandwich.
6. Heat a skillet or griddle over medium heat. Place the sandwiches in the skillet and cook for 3–4 minutes per side until the bread is golden brown and the cheese inside is melted.
7. Slice in half and serve warm.
