Ingredients:
2 large sweet potatoes, peeled and cut into ½-inch rounds
2 tablespoons olive oil
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon smoked paprika
½ cup crumbled feta cheese
3 tablespoons honey
2 tablespoons fresh parsley, chopped
Directions:
1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
2. Arrange sweet potato rounds on the sheet and brush with olive oil. Sprinkle evenly with salt, black pepper, and smoked paprika.
3. Roast for 25–30 minutes, flipping halfway through, until golden and tender.
4. Remove from oven, drizzle with honey, and sprinkle with crumbled feta cheese.
5. Garnish with fresh parsley and serve warm.
