INGREDIENTS:
2 apples, diced
1 cup cranberries (fresh or dried)
2 carrots, grated
1/4 cup walnuts, chopped (optional)
1/4 cup raisins (optional)
1/4 cup orange juice
1 tablespoon honey
Salt and pepper to taste
INSTRUCTIONS:
In a large bowl, combine apples, cranberries, carrots, walnuts, and raisins.
In a small bowl, whisk together orange juice, honey, salt, and pepper.
Pour dressing over salad and toss to coat evenly.
Chill in the refrigerator for at least 30 minutes before serving.
