Ingredients:
1 tbsp olive oil
1 lb ground beef
1 small onion, finely diced
1 green or red bell pepper, diced
1 cup long-grain white rice
1 can (14.5 oz) diced tomatoes, undrained
1 can (10.75 oz) condensed chicken broth
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp Cajun seasoning (optional)
1/4 cup chopped fresh parsley (optional)
Instructions:
1. Heat oil in a large pot over medium heat. Add beef and cook until browned, breaking up with a spoon. Drain excess grease.
2. Add onion and bell pepper; cook 5 minutes until softened.
3. Stir in rice, tomatoes, broth, salt, pepper, and Cajun seasoning.
4. Bring to a boil, reduce heat, cover, and simmer 20 minutes until rice is tender and liquid absorbed.
5. Stir in parsley if using. Serve hot.
