Ingredients:
For the Tuna Salad:
Red Onion: 2 tbsp, finely chopped
Mayonnaise: 2 tbsp (or Greek yogurt for a lighter option)
Lemon Juice: 1 tbsp
Salt & Pepper: To taste
For the Bowl:
Mixed Greens or Arugula: 2 cups
Tomato: 1 large, sliced
Pickles: 1/2 cup, sliced
Avocado: 1, diced
Boiled Eggs: 2, halved
Olives (Kalamata or Green): 1/4 cup
Feta Cheese: 1/4 cup, cubed
Artichoke Hearts: 1/4 cup, marinated
Directions
Prepare the Tuna Salad:
In a small bowl, combine tuna, red onion, mayonnaise (or Greek yogurt), lemon juice, salt, and pepper. Mix well and set aside.
Assemble the Bowl:
Lay mixed greens as the base of the plate. Arrange tomato slices, pickles, avocado, boiled eggs, olives, feta cheese, and artichoke hearts around the greens.
Add the Tuna Salad:
Place the prepared tuna salad in the center of the plate.
Serve & Enjoy:
Drizzle with olive oil or a light vinaigrette if desired. Serve immediately!
Notes & Variations
Add a sprinkle of oregano or fresh parsley for an herby touch.
Substitute tuna with shredded chicken or salmon for variety.
Include additional veggies like cucumbers or red peppers for extra crunch.
