Mix the dressing: In a bowl, whisk together mayo, mustard, vinegar/lemon juice, honey, garlic powder, salt, and pepper until creamy.
Assemble the salad: In a large bowl, combine broccoli, red onion, and eggs.
Add dressing: Gently toss with the creamy dressing until well coated.
Top it off: Sprinkle with crispy bacon and fresh chives.
