Ingredients:
• 4-6 cups mixed greens (tomatoes, cucumbers, red onions, bell peppers)
• 1 block feta cheese, crumbled
• 1 cup Kalamata olives, pitted
• 1 large cucumber, sliced
• 1 large red bell pepper, sliced
• 1/2 cup red onion, thinly sliced
• 1/4 cup extra-virgin olive oil
• 2 tbsp red wine vinegar
• 1 tsp dried oregano
• Salt and pepper to taste
Instructions:
1. In a large bowl, combine mixed greens, feta cheese, olives, cherry tomatoes, cucumber, bell pepper, and red onion.
2. In a small bowl, whisk together olive oil, red wine vinegar, and dried oregano.
3. Drizzle dressing over the salad and toss to combine.
4. Season with salt and pepper to taste.
