Ingredients:
1 ½ cups all-purpose flour
2 ½ tsp baking powder
½ tsp salt
1 tbsp sugar
1 ¼ cups milk
1 large egg
3 tbsp melted butter (or oil)
2 tsp vanilla extract
Instructions:
1. In a bowl, whisk together flour, baking powder, salt, and sugar.
2. In another bowl, combine milk, egg, melted butter, and vanilla extract.
3. Pour wet ingredients into dry ingredients and stir until just combined—don’t overmix.
4. Heat a non-stick pan or griddle over medium heat and lightly grease it.
5. Pour ¼ cup of batter for each pancake. Cook until bubbles form on top, then flip and cook the other side until golden.
6. Serve warm with butter, syrup, or your favorite toppings.
Optional: Add chocolate chips or blueberries to the batter for a fun twist!
