SKINNY, lightened up and healthy enchilada bake!!!! Made right in the crockpot!!! So cheesy and yet guilt-free!!! INGREDIENTS 2 boneless skinless chicken breasts 1 1/4 cups chicken broth 1 cup uncooked quinoa, rinsed 1 10-ounce can enchilada sauce 1 4.5-ounce can chopped green chilies 1/2 cup corn kernels, frozen, canned or roasted 1/2 cup canned black beans, drained and rinsed 2 tablespoons chopped fresh cilantro leaves 1/2 teaspoon cumin 1/2 teaspoon chili powder Kosher salt and freshly ground black pepper, to taste 3/4 cup shredded cheddar cheese 3/4 cup shredded mozzarella cheese 1 avocado, halved, seeded, peeled and diced 1 Roma tomato, diced INSTRUCTIONS Place chicken into a 6-qt slow cooker. Stir in chicken broth, quinoa, enchilada sauce, green chiles, corn, black beans, cilantro, cumin and chili powder; season with salt and pepper, to taste. Broccoli Cheddar Soup Recipe


A comforting and creamy soup filled with broccoli and cheddar cheese, perfect for cozy nights in!

Ingredients:

- 1 large head of broccoli, chopped into florets

- 1 small onion, diced

- 2 cloves of garlic, minced

- 4 cups of chicken broth or vegetable broth

- 2 cups of shredded cheddar cheese

- 1 cup of heavy cream

- 2 tablespoons of butter

- Salt and pepper to taste

Directions:

1. Melt the butter in a large pot over medium heat. Add the onion and garlic and sauté until the onion is translucent, about 5 minutes.

2. Add the broccoli and broth to the pot and bring to a boil. Reduce the heat to a simmer and let the soup cook for about 10 minutes, or until the broccoli is tender.

3. Using an immersion blender or a blender, puree the soup until smooth.

4. Stir in the heavy cream and cheddar cheese until the cheese is melted.

5. Season with salt and pepper to taste.

6. Serve the soup hot, garnished with additional cheddar cheese if desired.
