SLOW COOKER QUINOA ENCHILADA CASSEROLE

SKINNY, lightened up and healthy enchilada bake!!!! Made right in the crockpot!!! So cheesy and yet guilt-free!!! INGREDIENTS 2 boneless skinless chicken breasts 1 1/4 cups chicken broth 1 cup uncooked quinoa, rinsed 1 10-ounce can enchilada sauce 1 4.5-ounce can chopped green chilies 1/2 cup corn kernels, frozen, canned or roasted 1/2 cup canned black beans, drained and rinsed 2 tablespoons chopped fresh cilantro leaves 1/2 teaspoon cumin 1/2 teaspoon chili powder Kosher salt and freshly ground black pepper, to taste 3/4 cup shredded cheddar cheese 3/4 cup shredded mozzarella cheese 1 avocado, halved, seeded, peeled and diced 1 Roma tomato, diced INSTRUCTIONS Place chicken into a 6-qt slow cooker. Stir in chicken broth, quinoa, enchilada sauce, green chiles, corn, black beans, cilantro, cumin and chili powder; season with salt and pepper, to taste. Bacon Onion Tomato Pie



Ingredients:

1 9-inch pie shell

5 large tomatoes, peeled and sliced

4 slices bacon, cooked and chopped

1 sweet onion, sliced or chopped

1 tsp salt

1/2 tsp pepper

2 Tbsp milk

1/2 cup mayonnaise

1 1/2 cups sharp cheddar cheese, shredded

1/4 cup Ritz crackers, crushed

2 tsp butter, melted

2 green onions (scallions), sliced

Directions:

Prepare the Pie Shell:

Prick the pie shell with a fork. Bake at 350°F for about 10 minutes.

Cook the Bacon:

Fry bacon until tender. Drain and set aside.

Layer the Tomatoes and Onions:

Peel and slice tomatoes to fill the bottom of the pie shell. Sprinkle with chopped onion, salt, and pepper.

Add another layer of tomatoes, salt, and pepper.

Mix the Topping:

In a bowl, mix mayonnaise, bacon, cheese, and milk. Spoon this mixture on top of the tomatoes and pat down to cover them.

Add the Cracker Topping:

Mix the crushed Ritz crackers with melted butter. Spread on top of the pie.

Bake the Pie:

Bake at 350°F for 30 minutes.

Finish and Serve:

Sprinkle sliced scallions on top before serving.
