Ingredients:
2 lbs chicken thighs (bone-in or boneless)
1/4 cup soy sauce
1/4 cup white vinegar
1/2 cup water
4 cloves garlic, minced
2 bay leaves
1 tsp black peppercorns
1 tbsp vegetable oil
1 tbsp brown sugar (optional)
1 onion, sliced (optional)
Instructions:
In a bowl, marinate the chicken with soy sauce, garlic, and bay leaves for at least 30 minutes.
Heat vegetable oil in a pan and brown the chicken on all sides. Remove and set aside.
In the same pan, sauté onions (if using), then add the marinade, water, vinegar, peppercorns, and brown sugar.
Return the chicken to the pan and bring to a boil. Lower the heat and simmer for 30 minutes until chicken is tender and sauce thickens.
Remove bay leaves before serving. Serve with steamed rice.
Notes:
Add hard-boiled eggs or potatoes to make the dish heartier.
Adjust the sweetness by adding more or less sugar.
