Ingredients:
1 cup cream cheese, softened
1/4 cup honey
1/4 cup powdered sugar
1 teaspoon vanilla extract
1/2 cup crushed pistachios
1/2 cup chopped walnuts
1/2 teaspoon ground cinnamon
2 sheets frozen puff pastry, thawed
1/4 cup melted butter
1 tablespoon honey for drizzling
1 tablespoon powdered sugar for dusting
Directions:
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a bowl, mix the softened cream cheese, honey, powdered sugar, and vanilla extract until smooth. Set aside.
In a separate bowl, combine the crushed pistachios, chopped walnuts, and ground cinnamon.
Roll out the thawed puff pastry sheets on a floured surface and cut into 2-inch circles using a cookie cutter.
Brush each circle lightly with melted butter and sprinkle half of them with the nut mixture.
Place a spoonful of the cream cheese mixture on the plain circles and top with the nut-covered pastry circles, creating a sandwich. Press the edges lightly to seal.
Arrange the sandwich cookies on the prepared baking sheet and brush the tops with melted butter.
Bake for 12-15 minutes, or until golden brown and puffed.
Once cooled, drizzle with honey and dust with powdered sugar before serving.
