INGREDIENTS 2 boneless skinless chicken breasts 1 1/4 cups chicken broth 1 cup uncooked quinoa, rinsed 1 10-ounce can enchilada sauce 1 4.5-ounce can chopped green chilies 1/2 cup corn kernels, frozen, canned or roasted 1/2 cup canned black beans, drained and rinsed 2 tablespoons chopped fresh cilantro leaves 1/2 teaspoon cumin 1/2 teaspoon chili powder Kosher salt and freshly ground black pepper, to taste 3/4 cup shredded cheddar cheese 3/4 cup shredded mozzarella cheese 1 avocado, halved, seeded, peeled and diced 1 Roma tomato, diced INSTRUCTIONS Place chicken into a 6-qt slow cooker. Slow Cooker Chicken Bacon Ranch Sandwiches


These Slow Cooker Chicken Bacon Ranch Sandwiches are a delicious and easy-to-make meal that will quickly become a family favorite. Tender shredded chicken, creamy ranch-flavored sauce, crispy bacon, and melted cheddar cheese all come together in a warm bun for the ultimate comfort food experience. Perfect for busy weeknights or a casual weekend lunch.

Ingredients

1-2 lbs boneless, skinless chicken breasts

16 ounces cream cheese, cubed

2 tablespoons ranch seasoning mix or 1 packet

2 cups cheddar cheese, shredded

12 slices bacon, cooked and chopped

4 scallions, chopped

Directions

In the basin of a 6-quart slow cooker, lay in the chicken breasts.

Sprinkle the ranch seasoning over the top of the chicken.

Place the cubed cream cheese on top of the chicken.

Cover and cook on LOW for 6 hours or HIGH for 4 hours.

Once the chicken is cooked through, stir to distribute the cream cheese sauce, then use two forks to shred the chicken.

Stir in the crumbled bacon, chopped scallions, and 1 ½ cups of shredded cheddar cheese.


Sprinkle the remaining cheese across the top.

Cover and let the cheese melt for 10 minutes.

Pile the mixture onto buns and serve!
