Flavorful and easy to follow yellow basmati rice with turmeric and cheese that uses a handful of uncomplicated ingredients: ground turmeric, vinegar, vegetable stock, grated cheese, basmati rice, onion and garlic. Such a great recipe with lots of room for customization. Tastes great as a meal on its own or paired with any meat or vegetable dish of your choice.
Ingredients
350 ml (12 fl oz/ 1 ½ cups) vegetable stock or chicken stock
1 teaspoon turmeric powder
1 tablespoon white wine vinegar
2 tablespoons butter
1 small onion
2 garlic cloves
200 g (7.1 oz/ about 1 cup) basmati rice
a handful grated cheese
½ teaspoon salt
½ teaspoon pepper
Instructions
Begin by cleaning rice. Simply put rice in a bowl and add cold running water. Stir the rice around with your hands and drain. Repeat the process for two to three times.
Peel and mince onion and garlic. Then melt butter in the pot over medium heat and cook onion and garlic for about 5 minutes or until soft. Add drained rice, vinegar, turmeric powder, salt, pepper and vegetable stock and mix well.
Cover and bring to a boil over medium high heat. Once the water starts to boil, without removing or lifting up the lid, reduce the heat to medium low and let cook for 10 minutes. After 10 minutes remove the pot from the heat and let sit for 10 minutes. After add grated cheese and fluff rice with a fork. Enjoy!
