INGREDIENTS 2 boneless skinless chicken breasts 1 1/4 cups chicken broth 1 cup uncooked quinoa, rinsed 1 10-ounce can enchilada sauce 1 4.5-ounce can chopped green chilies 1/2 cup corn kernels, frozen, canned or roasted 1/2 cup canned black beans, drained and rinsed 2 tablespoons chopped fresh cilantro leaves 1/2 teaspoon cumin 1/2 teaspoon chili powder Kosher salt and freshly ground black pepper, to taste 3/4 cup shredded cheddar cheese 3/4 cup shredded mozzarella cheese 1 avocado, halved, seeded, peeled and diced 1 Roma tomato, diced INSTRUCTIONS Place chicken into a 6-qt slow cooker. Ingredients

  1. 3 large eggs
  2. 2 tablespoons of sugar
  3. A multi-purpose flour cup
  4. ¾ cup of milk
  5.  teaspoon almond extract
  6. a pinch of salt
  7. 4 tablespoons butter
  8. 1 cup of blueberries
  9. 1 cup strawberry
  10. ½ cup almond slices, toasted well

  1. Preheat the oven to 425 ° F.
  2. In a large bowl, whisk eggs, sugar, flour, milk, almond extract, and salt together until the mixture is firm but still lumpy. Sit aside.
  3. Melt the butter over medium heat in a 12-inch cast iron skillet. Add blueberries and strawberries to the pan. Cook until warm, about 2 minutes. Pour the mixture and immediately transfer it to the oven.
