📋 ingredients:

• 2 packs ramen noodles (discard seasoning packets)

• 8 oz spicy sausage (andouille, chorizo, or jalapeño sausage), sliced

• 1 tbsp oil or butter

• 1–2 fresh jalapeños, thinly sliced

• 2 cloves garlic, minced

• 4 cups chicken broth

• 1 tbsp soy sauce

• 1 tsp chili garlic sauce or sriracha (more to taste)

• 1/2 tsp smoked paprika

• 1/2 tsp black pepper

• 2 large eggs

• Optional toppings: green onions, sesame seeds, chili oil, shredded cheese

🥣 directions:

brown the sausage

Heat oil in a skillet over medium heat. Add sausage and cook until browned and slightly crispy. Remove and set aside.

build the broth

In the same pan, sauté jalapeños and garlic for 30 seconds until fragrant. Add chicken broth, soy sauce, chili garlic sauce, smoked paprika, and pepper. Bring to a simmer.

cook the noodles

Add ramen noodles to the broth and cook for 2–3 minutes until tender.

fry the eggs

While noodles cook, fry eggs in a separate pan until whites are set and yolks are still runny.

assemble

Divide ramen and broth into bowls. Top with sausage, fried egg, and any optional toppings you like.

serve

Crack that yolk, stir it in, and enjoy every spicy, savory bite.

💡 tips:

• Add a splash of heavy cream or butter for a richer broth

• Swap sausage for spicy ground beef or bacon if needed

• Extra heat? Drizzle chili oil or add crushed red pepper
