📋 ingredients:
• 2 packs ramen noodles (discard seasoning packets)
• 8 oz spicy sausage (andouille, chorizo, or jalapeño sausage), sliced
• 1 tbsp oil or butter
• 1–2 fresh jalapeños, thinly sliced
• 2 cloves garlic, minced
• 4 cups chicken broth
• 1 tbsp soy sauce
• 1 tsp chili garlic sauce or sriracha (more to taste)
• 1/2 tsp smoked paprika
• 1/2 tsp black pepper
• 2 large eggs
• Optional toppings: green onions, sesame seeds, chili oil, shredded cheese
🥣 directions:
brown the sausage
Heat oil in a skillet over medium heat. Add sausage and cook until browned and slightly crispy. Remove and set aside.
build the broth
In the same pan, sauté jalapeños and garlic for 30 seconds until fragrant. Add chicken broth, soy sauce, chili garlic sauce, smoked paprika, and pepper. Bring to a simmer.
