This slow cooker classic is rich, comforting, and ridiculously simple. Tender chicken, creamy sauce, and melty cheese come together for a no-fuss dinner the whole family loves.

• 2 lbs boneless, skinless chicken breasts
• 1 (10.5 oz) can cream of chicken soup
• 1 (10 oz) can Rotel diced tomatoes with green chiles, undrained
• 8 oz Velveeta cheese, cubed
• 1 cup shredded cheddar cheese
• 1/2 cup chicken broth
• 1/2 tsp garlic powder
• 1/2 tsp onion powder
• 1/2 tsp paprika
• Salt and pepper, to taste
• 8 oz spaghetti, broken in half
• Optional add-ins: sautΓ©ed bell peppers, onions, mushrooms, cooked bacon

slow cook the chicken
Place chicken breasts in the crockpot. Season with garlic powder, onion powder, paprika, salt, and pepper. Pour in cream of chicken soup, Rotel, and chicken broth. Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender.
shred and cheese it up
Shred chicken directly in the crockpot using two forks. Add Velveeta and shredded cheddar. Stir until melted and creamy.

Cook spaghetti separately according to package directions until just al dente. Drain and stir into the crockpot mixture until fully coated in the sauce.
finish and serve
Cover and cook an additional 10–15 minutes on low to let flavors meld. Taste and adjust seasoning as needed.
