ingredients:
for the stir-fry
• 1 lb flank steak or sirloin, thinly sliced against the grain
• 2 tbsp cornstarch
• 2 tbsp soy sauce
• 1 tbsp oyster sauce
• 1 tbsp vegetable or sesame oil
• 1 small onion, sliced
• 2 bell peppers (red & green), sliced
• 3 cloves garlic, minced
• 1 tsp grated fresh ginger
• Black pepper, to taste
for the sauce
• 1/2 cup beef broth
• 2 tbsp soy sauce
• 1 tbsp oyster sauce
• 1 tsp sugar or honey
• 1 tsp cornstarch
for serving
• Cooked white rice
• Optional: green onions or sesame seeds
directions:
marinate the beef
Toss sliced steak with cornstarch and soy sauce. Set aside 10 minutes.
make the sauce
Whisk all sauce ingredients together and set aside.
stir-fry
Heat oil in a large skillet or wok over high heat.
Add beef in a single layer and sear 1–2 minutes per side until just browned. Remove and set aside.
cook veggies
In the same pan, add onion and bell peppers. Stir-fry 2–3 minutes until crisp-tender.
Add garlic and ginger, cooking 30 seconds.
combine
Return beef to the pan.
Pour in sauce and stir until thickened and glossy, about 1–2 minutes.
Season with black pepper to taste.
serve
Serve hot over steamed rice.
Garnish if desired.
tips:
• Slice beef thin and against the grain for tenderness
• Don’t overcrowd the pan—cook in batches if needed
• Add mushrooms or snap peas for extra texture
