ingredients:
• 2 lbs boneless, skinless chicken breasts or thighs
• 2 tbsp olive oil
• 8 oz mushrooms, sliced
• 3 cloves garlic, minced
• 4 cups fresh spinach
• 1 cup heavy cream
• 1/2 cup chicken broth
• 1 cup shredded mozzarella
• 1/2 cup grated Parmesan
• 1 tsp Italian seasoning
• Salt and black pepper, to taste
• Optional: red pepper flakes or fresh parsley

prep
Preheat oven to 375°F (190°C).
Lightly grease a baking dish.
sear the chicken
Season chicken with salt, pepper, and Italian seasoning.
Heat olive oil in a skillet and sear chicken 2–3 minutes per side until lightly golden (it will finish cooking in the oven).
Transfer chicken to baking dish.
cook veggies
In the same skillet, sautΓ© mushrooms until browned.
Add garlic and cook 30 seconds.
Add spinach and cook just until wilted.
make the sauce
Stir in cream and chicken broth. Simmer 2–3 minutes.
Season to taste.
assemble
Pour mushroom-spinach sauce over chicken.
Top with mozzarella and Parmesan.
bake
Bake uncovered 25–30 minutes until chicken is cooked through and cheese is bubbly and lightly golden.
serve
Let rest 5 minutes.
Garnish if desired and serve with roasted veggies or a fresh salad.
