Now this is what balanced and delicious looks like! Juicy, golden pan-seared chicken breast sliced to perfection, paired with fluffy seasoned brown rice, sweet charred corn, and sautéed broccoli. A clean-eating classic that still slaps with flavor—simple, colorful, and full-on satisfying.

🛒 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:

For the Garlic Herb Chicken:

2 boneless skinless chicken breasts

1 tbsp olive oil

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp paprika

1/2 tsp Italian seasoning

Salt & pepper to taste

Optional: fresh parsley for garnish

For the Rice:

1 cup cooked brown rice (or white if preferred)

1/2 tbsp butter or olive oil

1 clove garlic, minced

Pinch of salt

Optional: chopped parsley or green onions

For the Veggies:

1 1/2 cups broccoli florets

3/4 cup corn (fresh, frozen, or canned)

1 tsp olive oil or butter

Salt, pepper, and a pinch of chili flakes (optional)

👨‍🍳 𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:

1. Cook the Chicken:

Pat chicken dry and season with all spices.

Heat olive oil in a skillet over medium-high.

Cook chicken for 5–6 minutes per side, or until golden and fully cooked through (internal temp 165°F).

Let rest for a few minutes, then slice into strips.

2. Make the Rice:

In a pan, heat butter or oil. Sauté garlic for 30 sec.

Add cooked rice and season with salt. Stir well and warm through.

Optional: stir in parsley or green onions at the end.

3. Sauté the Veggies:

Heat a bit of oil or butter in a skillet.

Add broccoli and corn. Sauté 5–7 minutes until the broccoli is bright green and lightly charred and corn gets golden spots.

Season with salt, pepper, and chili flakes if using.

4. Assemble the Plate:

Scoop the garlic rice on one side.

Add a generous portion of sautéed broccoli and corn.

Fan out the sliced chicken breast over the top.
