ingredients:
• 1 1/2 lbs chicken cutlets or thin-sliced chicken breasts
• 1 cup cottage cheese (small curd works best)
• 1/2 cup grated Parmesan cheese
• 1/2 cup breadcrumbs or panko
• 1 tsp garlic powder
• 1/2 tsp paprika
• 1/2 tsp black pepper
• Salt, to taste
• 2 tbsp olive oil or cooking spray

Preheat oven to 400°F (205°C).
Line a baking sheet with parchment paper or lightly grease.

In a bowl, mix cottage cheese, Parmesan, breadcrumbs, garlic powder, paprika, black pepper, and salt until well combined.

Pat chicken dry.
Press cottage cheese mixture evenly onto both sides of each cutlet.
