These Cheesy Taco Potatoes are everything you love about tacos piled onto golden, crispy potatoes and smothered in melty cheese. Perfect as a side, snack, or even a full-on comfort-food dinner π
ingredients:
for the taco beef
• 1 lb ground beef
• 1 packet taco seasoning (or homemade)
• 1/2 cup water
for the potatoes
• 2 lbs potatoes, diced (russet or Yukon gold)
• 2 tbsp olive oil
• Salt and black pepper
for topping
• 2 cups shredded cheddar or Mexican-blend cheese
• 1/2 cup sour cream
• 1/2 cup diced tomatoes
• 1/4 cup sliced green onions
• Optional: jalapeΓ±os, black olives, hot sauce
directions:
cook the taco beef
Brown ground beef in a skillet over medium heat.
Drain excess grease.
Add taco seasoning and water. Simmer 5 minutes. Set aside.
roast the potatoes
Preheat oven to 425°F (220°C).
Toss diced potatoes with olive oil, salt, and pepper.
Spread on a baking sheet in a single layer.
Roast 30–35 minutes, flipping halfway, until crispy and golden.
assemble
Transfer roasted potatoes to a baking dish or leave on the tray.
Top with seasoned beef and shredded cheese.
melt the cheese
Return to oven 5–7 minutes until cheese is fully melted and bubbly.
finish & serve
Top with sour cream, tomatoes, green onions, and any extras you like.
Serve hot and dig in.
