For the Plate
2 slices toast (white or sourdough)
3–4 slices smoked salmon
Fresh dill, for garnish
1 small cucumber, sliced
A handful of green grapes
For the Eggs
2 eggs
1 tbsp butter or oil
Salt & freshly cracked black pepper

1. Toast & Salmon
Lightly toast the bread.
Lay smoked salmon slices on top.
Garnish with small sprigs of fresh dill.
2. Cook the Sunny Eggs
Heat butter in a non-stick pan over medium-low heat.
Crack the eggs gently into the skillet.
Cook until whites are set and edges are crispy but yolks are still runny.
Season with salt and pepper.
3. Assemble the Plate
Place the salmon toast on one side.
Add a portion of cucumber slices and grapes.
Add the sunny eggs and top with more dill.
