π₯ Avocado Poached Egg Toast
1 slice whole-grain or rye bread
½ avocado, mashed
Small handful of arugula
1 egg
1 tsp vinegar (optional, for poaching)
Salt & pepper
π Tomato Cream Cheese Toast
1 slice whole-grain or rye bread
2–3 tbsp cream cheese
½ medium tomato, sliced
Salt & pepper
☕ Coffee or Tea
Your preferred brew
Splash of milk (optional)

1. Make the Poached Egg
Heat a small pot of water until gently simmering (not boiling).
Add 1 tsp vinegar if desired.
Crack egg into a small bowl.
Swirl the water slightly, then slide egg in.
Poach 3–4 minutes for a soft center.
Remove with a slotted spoon.
2. Prepare the Avocado Toast
Toast bread to preference.
Spread mashed avocado over toast.
Top with arugula.
Place poached egg on top.
Finish with salt, pepper, and optional chili flakes.
3. Make the Tomato Cream Cheese Toast
Toast bread.
Spread cream cheese generously.
Layer tomato slices.
Season with salt and cracked pepper.
4. Serve
Place both toasts on a plate and enjoy with a hot cup of coffee or tea.
