For the Salmon:
2 salmon fillets
1 tbsp olive oil
2 cloves garlic, minced
1 tbsp chopped almonds
1/2 tsp smoked paprika
Salt & pepper to taste

1 bunch asparagus, trimmed
2 large red potatoes (with skin)
2 tbsp butter
1/4 cup milk or cream
2 green onions, chopped
Salt & black pepper to taste

Prep the Salmon: Preheat oven to 400°F. Rub salmon with olive oil, paprika, garlic, almonds, salt, and pepper. Bake for 12–15 mins until it flakes easily.
Roast the Asparagus: Toss asparagus in olive oil, season with salt, and roast alongside the salmon for 10–12 mins.
Make the Mash: Boil potatoes until fork-tender (15 mins). Mash with butter, milk, salt, and pepper. Stir in green onions.
Serve: Plate the salmon with roasted asparagus and a big scoop of scallion mashed potatoes. Add a lemon wedge for a citrusy kick!
