

2 large eggs 

2 tbsp milk (optional for fluffiness) 

1 tbsp butter or olive oil 

Salt & pepper to taste 

1 tbsp chopped herbs (parsley, chives, or cilantro) 

2 tbsp cheese (optional) 

2 tbsp diced onions or bell peppers (optional) 


1 cup lettuce, chopped 

1/2 cucumber, sliced 

1/2 cup cherry tomatoes 

1 tbsp olive oil 

1 tbsp lemon juice 

1/2 tsp dried herbs (oregano, parsley) 

Salt & pepper to taste 



In a bowl, mix lettuce, cucumber, and cherry tomatoes.
Drizzle with olive oil and lemon juice.
Sprinkle dried herbs, salt, and pepper. Toss well and set aside.

In a bowl, whisk eggs, milk, salt, pepper, and fresh herbs.
Heat a non-stick pan on medium heat and melt the butter or oil.
Pour the egg mixture and let it cook undisturbed for 1-2 minutes.
Add cheese, onions, or bell peppers if using.
Fold the omelette in half and cook for another minute until golden brown.
Remove from heat and serve hot with the fresh salad.
