Ingredients:
1 cup (120g) all-purpose flour
1/4 tsp salt
2 large eggs (room temperature)
1/2 cup (100g) granulated sugar
1/4 cup (60ml) milk (room temperature)
1/4 cup (60ml) vegetable oil (or melted butter for richer flavor)
1 tsp vanilla extract
Instructions:
Preheat Oven
Preheat your oven to 175°C (350°F).
Lightly grease or line a 6-cup muffin tin or small round mini cake molds.
Dry Ingredients
In a bowl, whisk together the flour, baking powder, and salt. Set aside.
Wet Ingredients
In a separate large bowl, beat the eggs and sugar together using a hand mixer or whisk until pale and fluffy (about 3-5 minutes).
Add Liquid Ingredients
Stir in the milk, oil, and vanilla extract until combined.
Combine Mixtures
Gradually sift the dry ingredients into the wet mixture, gently folding it in with a spatula until no lumps remain.
Be careful not to overmix — this keeps the sponge light.
Bake
Divide the batter evenly into your prepared molds.
Bake for 15-18 minutes, or until a toothpick inserted in the center comes out clean.
Cool & Serve
Let them cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
