Ingredients:
2 cups granulated sugar
3/4 cup butter (1 1/2 sticks)
2/3 cup evaporated milk
3.4 ounces instant butterscotch pudding mix
3 1/2 cups quick oats
Dash of salt to taste
1 cup semi-sweet chocolate chips
1/2 cup toffee chips
Instructions:
1. In a large saucepan, combine sugar, butter, and evaporated milk. Bring to a boil over medium heat, stirring constantly.
2. Once boiling, continue to cook for 1 minute, then remove from heat.
3. Stir in the butterscotch pudding mix until fully dissolved and smooth.
4. Add quick oats and a dash of salt, stirring to combine.
5. Let the mixture cool for about 5 minutes, then fold in chocolate chips and toffee chips.
6. Drop spoonfuls of the mixture onto wax or parchment paper. Flatten slightly if desired.
7. Allow cookies to set at room temperature for 30–45 minutes or until firm.
8. Store in an airtight container at room temp for up to 1 week.
