1. Watermelon Lemonade
Ingredients:
4 cups seedless watermelon, cubed
1 cup fresh lemon juice (about 4–6 lemons)
½ cup sugar or honey (adjust to taste)
2 cups cold water (or sparkling water for fizz)
Ice cubes
Optional: mint leaves for garnish
Instructions:
Blend:
In a blender, puree the watermelon until smooth. Strain through a fine sieve if you prefer it pulp-free.
Mix:
In a large pitcher, combine the watermelon juice, fresh lemon juice, sugar (or honey), and water. Stir well until the sugar dissolves. Taste and adjust sweetness or tartness as you like.
Serve:
Fill glasses with ice, pour the watermelon lemonade over, and garnish with fresh mint or extra watermelon slices.
Enjoy:
Serve chilled and sip away!
Tip:
For a fun twist, replace half the water with sparkling water just before serving for a fizzy version!
2. Watermelon Salsa
Ingredients:
2 cups watermelon, finely diced (seedless or remove seeds)
½ cup cucumber, peeled & finely diced
¼ cup red onion, finely minced
1 small jalapeΓ±o or chili, seeded and finely chopped (optional, for a kick)
¼ cup fresh cilantro, chopped
Juice of 1 lime (about 2 tablespoons)
Salt to taste
Optional: a sprinkle of black pepper or a drizzle of honey for extra flavor
Instructions:
Prep:
Dice the watermelon and cucumber into small, bite-sized pieces for easy scooping.
Combine:
In a mixing bowl, combine the watermelon, cucumber, red onion, jalapeΓ±o (if using), and cilantro.
Season:
Add the lime juice and a pinch of salt. Stir gently to combine — be careful not to mash the watermelon.
Chill & Serve:
Let it chill in the fridge for about 15–30 minutes to let the flavors meld. Serve with tortilla chips, on tacos, or alongside grilled chicken or fish.
3. Watermelon Feta Salad
Ingredients:
4 cups seedless watermelon, cubed or balled
1 cup cucumber, sliced or diced
1 cup feta cheese, cut into small cubes
¼ cup red onion, thinly sliced
¼ cup fresh mint leaves, chopped
Juice of 1 lime (or lemon)
1 tablespoon olive oil (optional)
Freshly cracked black pepper, to taste
Instructions:
Combine:
In a large bowl, gently toss together the watermelon, cucumber (if using), red onion, and mint.
Add Feta:
Add the cubes feta over the top and gently mix.
Dress:
Drizzle with lime juice and olive oil, then season with black pepper to taste.
Serve:
Serve immediately, or chill for 15–20 minutes to let the flavors blend. Best enjoyed fresh!
4. Watermelon Sago Dessert
1 cup small tapioca pearls (sago)
2 cups fresh watermelon (cubed or blended)
1 cup coconut milk or evaporated milk, chilled
2–3 tbsp condensed milk or sugar
A pinch of salt
Ice cubes or crushed ice (optional)
Mint leaves or extra fruit for garnish (optional)
Instructions:
Boil a pot of water, then add sago.
Stir to prevent sticking. Cook for 10–15 minutes until mostly translucent. Turn off heat and cover for 5 more minutes until fully translucent. Rinse under cold water and drain.
Option 1: Blend watermelon into juice for a drink-like dessert.
Option 2: Keep watermelon in small cubes for a chunkier, fruitier texture—or use both!
In a bowl, combine coconut milk or sweetener, and a pinch of salt. Stir in cooked sago and watermelon (juice or cubes, or both).
Serve immediately with ice or chill in the fridge for 30 minutes. Garnish with mint or small watermelon balls if desire.
