Easy to make and even easier to enjoy – this Crockpot Potato Broccoli Cheddar Soup is a must-try for soup lovers!
Ingredients:
4 cups potatoes, peeled and diced
4 cups broccoli florets
1 medium onion, diced
3 cloves garlic, minced
4 cups chicken or vegetable broth
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon smoked paprika
1 cup heavy cream
2 cups sharp cheddar cheese, shredded
1/2 cup sour cream
2 tablespoons butter
Optional toppings: additional shredded cheddar, chopped green onions.
Directions:
In a large crockpot, combine the diced potatoes, broccoli florets, diced onion, minced garlic, chicken or vegetable broth, salt, black pepper, and smoked paprika.
Cover and cook on low for 6-7 hours, or on high for 3-4 hours, until the potatoes are tender.
Use an immersion blender to blend the soup until smooth, leaving some chunks for texture if desired. Alternatively, transfer the soup in batches to a blender and blend until smooth.
Stir in the heavy cream, shredded cheddar cheese, sour cream, and butter. Continue to cook on low for an additional 30 minutes, until the cheese is melted and the soup is heated through.
Serve hot with optional toppings like extra shredded cheddar, chopped green onions, or crispy bacon bits.
