Ingredients:
8 slices of your favorite bread
2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 pound shrimp, peeled and deveined
2 tbsp butter
4 cloves garlic, minced
2 tbsp fresh parsley, chopped
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp red pepper flakes (optional)
4 tbsp butter (for grilling)
Instructions:
Prepare Garlic Butter Shrimp:
In a skillet over medium heat, melt 2 tbsp of butter.
Add minced garlic and sauté until fragrant.
Add the shrimp, salt, black pepper, and red pepper flakes (if using).
Cook the shrimp until pink and opaque, about 2-3 minutes per side.
Remove the shrimp from the skillet and set aside.
Prepare Garlic Butter:
In a small bowl, mix the remaining butter with half of the chopped parsley and some minced garlic.
Assemble the Sandwiches:
Spread garlic butter on one side of each slice of bread.
On the non-buttered side of 4 slices of bread, layer with mozzarella cheese, shrimp, and Parmesan cheese.
Sprinkle with the remaining parsley.
Top with another slice of bread, buttered side out.
Grill the Sandwiches:
Heat a skillet or griddle over medium heat.
Place the assembled sandwiches in the skillet and cook until golden brown and the cheese is melted, about 3-4 minutes per side.
Serve:
Cut the sandwiches in half and serve hot.
