Refreshing Spinach salad with apples, pecans and feta takes only 5 minutes to prepare. It's healthy, delicious, and perfect for a quick side dish or a simple meal for lunch or dinner.
Ingredients
Vinaigrette Dressing
3 tablespoons olive oil
2 tablespoons apple cider vinegar
1 teaspoon dijon mustard
1/2 teaspoon honey
1/4 teaspoon salt
1/8 teaspoon ground black pepper
Salad
5 ounces (150 grams) 1 bag of baby spinach
1 large tart apple sliced
4 ounces (125 grams) feta cheese crumbled
1/2 cup pecans toasted and chopped
Instructions
Prepare the salad dressing by whisking together olive oil, apple cider vinegar, dijon mustard, honey, salt and pepper in a bowl. Set aside.
In a separate bowl, add spinach, apple slice, feta cheese, and pecans in a bowl, stir in the vinaigrette dressing, and toss well with a spoon. Serve immediately with additional feta cheese and pecans on top.
