Ultimate Umami Garlic Noodles
This recipe recreates the famous San Francisco-style garlic noodles: chewy, buttery, savory, and loaded with fresh garlic.

🛒 Ingredients
The Noodles
1 lb (450g) Fresh yakisoba noodles or dried spaghetti/linguine.
1 tbsp Neutral oil (if using dried pasta).
The Garlic Sauce
4 tbsp (1/2 stick) Unsalted butter.
10-12 cloves Garlic, finely minced (don't use the jarred stuff!).
1 tbsp Oyster sauce.
1 tsp Light soy sauce.
1 tsp Fish sauce (this is the "secret" ingredient for deep flavor).
1 tbsp Brown sugar (adjust to taste).
1/4 cup Grated Parmesan cheese (optional, but highly recommended).
Garnish
2 Green onions, thinly sliced.
Optional: Red pepper flakes for heat.
🍳 Instructions
Prepare the Noodles:
If using dried pasta, boil in salted water according to package directions. Drain, but reserve 1/4 cup of the pasta water.
If using fresh yakisoba, quickly blanch or loosen them under warm water and set aside.
Sauté the Garlic:
In a large wok or skillet over low-medium heat, melt the butter.
Add the minced garlic. Sauté for 1–2 minutes until fragrant and softened. Do not let it brown or burn, as this makes the garlic bitter.
Build the Umami Sauce:
Stir in the oyster sauce, soy sauce, fish sauce, and brown sugar. Whisk together until the sugar dissolves and the sauce begins to bubble slightly.
Toss:
Add the noodles to the skillet. Increase heat to medium.
Toss vigorously with tongs to coat every strand in the garlic butter.
If the noodles seem too dry, add a splash of the reserved pasta water.
Finish:
Remove from heat. Sprinkle the Parmesan cheese and green onions over the noodles and give it one final toss. The cheese should melt into the sauce, creating a creamy emulsion.
💡 Pro-Tips
The Garlic Press: For the best texture, use a garlic press or mince the garlic into a paste. Larger chunks of garlic won't distribute as evenly.
Protein Additions: These noodles pair perfectly with:
Shrimp: Sautéed in the same pan before starting the sauce.
Steak: Thinly sliced ribeye or flank steak.
Tofu: Crispy pan-fried cubes.
Storage: These are best served immediately. If reheating, add a tiny bit of water or butter to loosen the sauce.
