This recipe is designed for maximum crunch and flavor. By using a specific spice rub for the chicken and a high-heat roasting method for the wedges, you get a "fried" texture without the mess of a deep fryer.

The Crispy Chicken


10-12 Chicken drumsticks (skin on)


2 tbsp Olive oil


1/4 cup All-purpose flour (optional, for extra crunch)


Spice Rub: 1 tbsp smoked paprika, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp dried oregano, 1/2 tsp cayenne pepper, 1 tsp salt, 1/2 tsp black pepper.


Golden Potato Wedges


4-5 Large Russet or Yukon Gold potatoes


3 tbsp Olive oil or melted butter


1/2 cup Freshly grated Parmesan cheese


Seasoning: 1 tsp salt, 1 tsp dried rosemary or thyme, 1/2 tsp paprika.


Creamy Apple & Cabbage Slaw


4 cups Shredded cabbage (mix of red and green)


1 Large carrot, grated


1 Green apple, julienned


Dressing: 1/2 cup mayonnaise, 1 tbsp apple cider vinegar, 1 tbsp honey, 1 tsp Dijon mustard, salt and pepper to taste.

1. Preparation & Preheating


Preheat your oven to 425°F (220°C).


Line two large baking sheets with parchment paper or lightly greased foil. If you have wire cooling racks that fit inside the pans, use them for the chicken to ensure 360-degree crispiness.


2. The Chicken


Pat the drumsticks bone-dry with paper towels. Dry skin = Crispy skin.


In a large bowl, toss the chicken with olive oil.


Combine the spice rub and flour in a small bowl. Sprinkle over the chicken and toss until evenly coated.


Arrange on the baking sheet, leaving space between each piece.


Bake: Total time 40-45 minutes. Flip them halfway through.


3. The Wedges


Scrub potatoes and cut into even wedges (slice in half, then each half into 3 or 4 wedges).


Pro Tip: Soak wedges in cold water for 10 minutes to remove excess starch, then pat very dry.


Toss wedges with oil, salt, herbs, and paprika. Save the Parmesan for later.


Spread in a single layer on the second baking sheet.
