The Shrimp
1 lb large shrimp (peeled, deveined, tails removed)
2 tbsp olive oil
3 tbsp honey
2 tbsp chipotle peppers in adobo sauce (finely minced)
2 cloves garlic (grated)
1 tsp smoked paprika
½ tsp cumin
Salt and pepper to taste
Lime-Cilantro Slaw
3 cups shredded cabbage (mix of red and green)
¼ cup fresh cilantro (chopped)
2 tbsp lime juice
1 tbsp olive oil
Pinch of salt
Chipotle Lime Crema
½ cup sour cream or Greek yogurt
1 tbsp adobo sauce (from the chipotle can)
1 tsp lime zest
Squeeze of lime juice
For Assembly
Small flour or corn tortillas
Sliced avocado
Pickled red onions

1. Marinate the Shrimp
In a medium bowl, whisk together the olive oil, honey, minced chipotle peppers, garlic, paprika, and cumin. Add the shrimp and toss until evenly coated. Let it sit for 10–15 minutes while you prep the toppings.
2. Prepare the Slaw & Crema
Slaw: In a large bowl, toss the shredded cabbage with cilantro, lime juice, olive oil, and salt. Set aside to soften.
Crema: In a small ramekin, stir together the sour cream, adobo sauce, lime zest, and lime juice until smooth.
3. Sear the Shrimp
Heat a large skillet over medium-high heat. Once hot, add the shrimp in a single layer (work in batches if necessary). Cook for 2–3 minutes per side until the honey starts to caramelize and the shrimp are opaque and slightly charred.
4. Char the Tortillas
Quickly warm the tortillas over an open gas flame or in a dry pan until soft and slightly charred around the edges.
5. Assemble
Layer a generous heap of slaw on each tortilla. Top with 3–4 honey chipotle shrimp. Drizzle with the chipotle crema and garnish with avocado slices and pickled red onions.

Control the Heat: For a milder taco, use only 1 tbsp of chipotle peppers and remove the seeds before mincing.
Don't Overcook: Shrimp cook very fast! Remove them as soon as they turn pink and curl into a "C" shape.
Add Crunch: Toasted pepitas (pumpkin seeds) on top add a great texture contrast to the soft avocado.
