2 ripe avocados (1 diced, 1 sliced for topping)
1 large mango, diced
1–2 tomatoes, chopped
1/4 red onion, finely diced
1/2 bell pepper (any color), diced
2 cups chopped romaine or mixed greens
1 tbsp fresh chives or green onion, chopped
Salt & cracked black pepper to taste
For the Dressing:
Juice of 1 lime
1 tbsp olive oil
1 tsp honey or maple syrup
Pinch of chili flakes (optional)

Prep the Veg & Fruit:
Dice the avocado, mango, tomato, red onion, and bell pepper. Add to a large mixing bowl along with chopped greens and chives.
Whisk the Dressing:
In a small bowl, whisk together lime juice, olive oil, honey (or maple syrup), and chili flakes. Taste and adjust seasoning.
Toss It All Together:
Pour dressing over salad and gently toss until coated.
Top & Serve:
