These Slow Cooker French Dip Sandwiches with Garlic & Mushrooms are rich, beefy, and incredibly comforting. π ingredients:
• 3–4 lb beef chuck roast
• Salt and black pepper, to taste
• 1 tsp garlic powder
• 1 tsp onion powder
• 1 tbsp olive oil
• 1 large onion, thinly sliced
• 3 cups beef broth
• 1 tbsp Worcestershire sauce
• 1 tbsp soy sauce
• 4 cloves garlic, minced
• 8 oz mushrooms, sliced
• 6–8 hoagie or French rolls
• 6–8 slices provolone or Swiss cheese
• Optional: butter for toasting rolls

sear the beef
Season roast with salt, pepper, garlic powder, and onion powder.
Heat olive oil in a skillet and sear beef on all sides until browned.
slow cook
Place sliced onions in the bottom of the slow cooker.
Add beef on top.
Pour in beef broth, Worcestershire, soy sauce, and garlic.
Add mushrooms around the beef.
cook
Cover and cook on LOW for 8 hours or HIGH for 4–5 hours, until beef is fork-tender.
shred & soak
Remove beef, shred with forks, and return to the broth to soak up flavor.
assemble sandwiches
Split rolls and butter lightly.
Toast until golden.
Pile beef onto rolls, top with cheese, and broil briefly until melted.
serve
Serve hot with small bowls of the cooking broth (au jus) for dipping.
