This Mozzarella-Stuffed Bacon-Wrapped Meatloaf is everything a comfort-food craving could want. Savory ground beef, gooey mozzarella in the center, and crispy bacon on the outside create a show-stopping dinner that’s rich, flavorful, and totally irresistible π
π ingredients:
• 2 lbs ground beef (80/20)
• 1 cup breadcrumbs (or almond flour for low-carb)
• 1/2 cup milk
• 1 large egg
• 1 small onion, finely diced
• 2 cloves garlic, minced
• 1 tsp Worcestershire sauce
• 1 tsp salt
• 1/2 tsp black pepper
• 1/2 tsp paprika
• 8 oz mozzarella cheese, cut into sticks
• 10–12 slices bacon
• Optional glaze: 1/4 cup ketchup, 2 tbsp brown sugar, 1 tsp Dijon mustard

prep the meatloaf
Preheat oven to 375°F / 190°C.
In a large bowl, mix ground beef, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, salt, pepper, and paprika until just combined.
stuff with cheese
Shape half the meat mixture into a loaf on a lined baking sheet or in a loaf pan.
Place mozzarella sticks in the center, then top with the remaining meat mixture, sealing the edges around the cheese.
wrap in bacon
Lay bacon slices over the top of the meatloaf, tucking the ends underneath.
Brush with optional glaze if using.
bake
Bake 50–60 minutes, or until meatloaf reaches 160°F internal temperature and bacon is crisp.
Optional: broil 2–3 minutes at the end to crisp bacon further.
rest & serve
Let rest 10 minutes before slicing to keep cheese from spilling out.
Slice thick and serve with mashed potatoes or roasted veggies.
